Cooking Instructions: Cook 175 gms of rice and keep aside. Cut brinjal (long) and soak in salt water of 05 minutes. Heat 03 – 04 tbsp of oil, add cumin, mustard seeds, when they crackled out add 01 tbsp of urad, and chana dal, few cashew nut, when it turns to brown add curry leaves and soaked brinjal pieces, salt to taste and 02 tbsp of BMP Vangi Bath Powder, cover it until brinjal turns to tender, mix well with cooked rice with fried coconut.
